Fruit: 100% whole berry (no stems)
Fermentation: BRL97 yeast, 2-ton open top fermenter
Barrel aging: 16 months in French oak (22.2% new/Billon Côte d'Or Medium)
Alcohol content: 12.9% by volume
Bottled: February 2026
Production: 94 cases

Lets a cool, wet conifer note spill out first, backed by a fresh core of bitter cherry and damson plum fruit flavors. The long, feline structure stretches out with nervosité, with pennyroyal and mineral notes emerging steadily on the piercing finish. Distinctive. Best from 2027 through 2034.—J.M.
